  • 3 cans black beans 15 oz each, drained
  • 1 cup corn canned, frozen, or grilled
  • 1 bell pepper any color, chopped
  • 1 cup cherry tomatoes halved
  • 1 small red onion chopped
  • ½ cup fresh cilantro chopped
  • 1 jalapeño finely chopped (remove seeds for mild heat)
  • ½ tsp lime zest
  • 2 tbsp lime juice
  • ¼ cup olive oil
  • ¼ cup white wine vinegar
  • ½ tsp chili powder
  • ½ tsp cumin
  • ½ tsp salt
  • Optional garnishes: avocado feta, lime wedges

Instructions
