- 1 small red onion chopped
- ½ cup fresh cilantro chopped
- 1 jalapeño finely chopped (remove seeds for mild heat)
- ½ tsp lime zest
- 2 tbsp lime juice
- ¼ cup olive oil
- ¼ cup white wine vinegar
- ½ tsp chili powder
- ½ tsp cumin
- ½ tsp salt
