Ingredients
  

  • 3 cans black beans 15 oz each, drained
  • 1 cup corn canned, frozen, or grilled
  • 1 bell pepper any color, chopped
  • 1 cup cherry tomatoes halved
  • 1 small red onion chopped
  • ½ cup fresh cilantro chopped
  • 1 jalapeño finely chopped (remove seeds for mild heat)
  • ½ tsp lime zest
  • 2 tbsp lime juice
  • ¼ cup olive oil
  • ¼ cup white wine vinegar
  • ½ tsp chili powder
  • ½ tsp cumin
  • ½ tsp salt
  • Optional garnishes: avocado feta, lime wedges

Instructions
 

  • Step 1: Prep the veggies
  • In a large bowl, combine black beans, corn, bell pepper, tomatoes, onion, cilantro, and jalapeño.
  • Step 2: Make the dressing
  • Whisk together lime zest, lime juice, olive oil, vinegar, chili powder, cumin, and salt in a small bowl.
  • Step 3: Toss everything
  • Pour the dressing over the bean mixture and stir gently to coat. Taste and adjust salt or lime if needed.
  • Step 4: Chill
  • Cover and refrigerate for at least 2 hours (or overnight) to let flavors meld.
  • Step 5: Serve
  • Garnish with avocado, feta, or extra lime. Serve as a side, salsa with chips, or over greens.

Notes

Swap corn for an extra cup of tomatoes if preferred. For a lighter version, use less oil.
