bell pepper
any color, chopped

cherry tomatoes

small red onion

finely chopped (remove seeds for mild heat)

Instructions
Step 1: Prep the veggies
In a large bowl, combine black beans, corn, bell pepper, tomatoes, onion, cilantro, and jalapeño.
Step 2: Make the dressing
Whisk together lime zest, lime juice, olive oil, vinegar, chili powder, cumin, and salt in a small bowl.
Step 3: Toss everything
Pour the dressing over the bean mixture and stir gently to coat. Taste and adjust salt or lime if needed.
Step 4: Chill
Cover and refrigerate for at least 2 hours (or overnight) to let flavors meld.
Step 5: Serve
Garnish with avocado, feta, or extra lime. Serve as a side, salsa with chips, or over greens.
Notes
Swap corn for an extra cup of tomatoes if preferred. For a lighter version, use less oil.
