A refreshing tomato peach burrata salad combining juicy tomatoes, sweet peaches, and creamy burrata cheese, finished with a drizzle of olive oil and fresh basil — the perfect summer dish!
In a jar or bowl, whisk together the olive oil, vinegar, honey, shallot, garlic, lemon zest, basil, oregano, dill, thyme, red pepper flakes, salt, and pepper. Mix until smooth and set aside.
Step 2: Marinate the fruit
In a large bowl, toss the cherry tomatoes, peach slices, and cherries with about one-third of the dressing. Let this sit for at least 15 minutes at room temperature—or up to 4 hours in the fridge.
Step 3: Assemble the salad
Arrange the fruit mix in a serving bowl or plate. Tear the burrata cheese into chunks and place it on top of the salad.
Step 4: Finish and serve
Drizzle the remaining vinaigrette over everything. Top with toasted pumpkin seeds and a few extra fresh herbs. Serve with crusty bread if you like.
