Ingredients
  

  • 2 2 Potatoes
  • 6 tbsp Olive Oil
  • 1 Onion
  • 4 Tortilla
  • ½ cup Salsa
  • ¼ cup Ranch Dressing
  • 3 ounces Cheddar Cheese

Instructions
 

  • On a cutting board, cut the onions and potatoes to prepare the fillings. Slice the onions properly for a caramelized texture. Dice the potatoes in about ½ inch cubes.
  • After cutting the potatoes, microwave them at high temperature for about 2 minutes. This process will soften the potatoes and prepare a mushy texture, perfect for a burrito.
  • While the potatoes are microwaved, prepare the caramelized onions. Take half of the prepared olive oil. Cook the onions at medium heat for about 10 minutes.
  • Make sure the heat is not too high so that the onions burn up. Keep stirring the onions and wait for them to become slightly brown and stop the heat.
  • Store the caramel onions in a bowl and now cook the potatoes further. Take the rest of the oil and stir fry the potatoes. Make sure not to cook the potatoes all at once. Take potatoes up to the amount that the pan has a single layer of them. You can do this step in batches
  • .Heat until the potatoes change slightly in color. It will take about 10 minutes. Mix a pinch of salt and pepper and remove from heat.
  • Take a tortilla and put about ¼ of the caramelized onions. Top with potatoes, salsa, and ranch dressing. Finish it off with some cheese as you want, and wrap up the burrito.
  • Your potato and cheese burrito is now ready. Before having a bite, you can heat the burritos for 20 seconds, so the cheese inside melts. It will also soften the tortilla and make your burritos softer and creamier.
