Jamaican Chicken Soup

Ingredients
  

  • 1 lb Boneless Chicken: Boneless chickens are best for soup items. Avoid adding any hard to chew items to the soup for smooth eating.
  • 1 pack Chicken Noodle Soup Mix:
  • ½ lb Fresh Pumpkin: You can use freshly chopped pumpkins for a better taste. Avoid using readymade frozen pumpkin pieces.
  • ½ lb Yellow Yam: Yams are a great source of macro and micronutrients. It will also add a Jamaican flavor to the soup.
  • 1 Chocho Chayote: Being rich in essential vitamins and fibers, Chayotes are a great taste enhancer.
  • 1 Corn: You can use boiled corn for this recipe.
  • 2 Medium Carrots: Carrots can be cut into pieces and added to the soup. You can also use baby carrots.
  • 1 Medium Onion: Avoid using red onions or shallots as they might give an unnecessary fragrance to the soup.
  • 4 cloves Garlic: Garlics are good for a nice aroma.
  • 1 Scotch Bonnet Pepper: It is one of the hottest peppers with a strong aroma. This goes perfectly with a Jamaica style soup.
  • 2 Scallions: For enhancing the aroma and flavor you can use scallions.
  • 5 Sprig of Thyme: It also helps in inducing a nice taste and increasing the savoriness of the dish.
  • 5 Pimento Berries: It is a seasoning used in many parts of Jamaica.
  • ½ tsp salt: Salt can be added more or less based on taste adjustments.
  • 1 cup Water: For boiling the veggies and cooking the spices before the main mixture.
  • 12 dumplings: It is an added condiment that is necessary for the soup.

Instructions
 

  • Step 1: Boil Some Water - In a large cooking pot, take about 1 cup of water and bring it to a boil.
  • Step 2: Add the Chicken - Prepare the chicken by cutting them into bite-size pieces and add them to the boiling water.
  • Step 3: Add the Veggies - Cut the carrots, corn, chayote, and pumpkin into your preferred shape and size and add them one by one to the cooking pot.
  • Step 4: Cook for Some Time - Set the heat to medium and cook the mix for 45 minutes.
  • Step 5: Add the Dumplings - When the veggies are almost cooked, add the readymade dumplings to the soup. Keep stirring so the dumplings do not set at the bottom. Keep cooking for 20 minutes this way.
