Fill a pot with salted water and drop in the lemon quarters. Bring it to a boil.
Step 2: Cook the shrimp
Add shrimp and cook for 1–2 minutes, just until they turn pink and firm. Immediately transfer them to a bowl of ice water to cool down fast.
Step 3: Dry the shrimp
Once chilled, drain the shrimp and gently pat them dry with paper towels.
Step 4: Mix everything
In a large bowl, add shrimp, imitation crab, celery, red onion, Old Bay, lemon juice, salt, pepper, mayonnaise, and dill. Stir gently until well coated.
Step 5: Chill or serve
Top with a little more dill and enjoy right away, or cover and chill in the fridge for up to 2 days.
Notes
You can use pre-cooked shrimp or swap in real crab or lobster if you like. If you only have dried dill, use 1/2 tsp instead of fresh. This crab seafood salad works great in sandwiches, lettuce cups, or even stuffed in an avocado!
